Description

<p>Basic sponge cake mix I use for birthday cakes, flavour it to suit.</p>

Ingredients
125grams butter (softened)
125grams caster sugar
2 egg
1tablespoon baking powder
Instructions

<p>1. Preheat the oven to Gas Mark 4/180 C (160 C for a fan oven).</p>
<p>2. Grease and flour a 20cm (6-inch) deep cake tin. Line the base with baking parchment.</p>
<p>3. Put all the ingredients into a bowl and beat for about 2 minutes or until smooth.</p>
<p>4. Pour mixture into cake tin.</p>
<p>5. Cook for about 1 hour.&nbsp; The cake is cooked when firm to touch or a skewer inserted into the center comes out clean.</p>

<p><u><strong>Adding Flavours</strong></u></p>
<p><strong>Vanilla </strong>- add 1 teaspoon of vanilla essence.</p>
<p><strong>Chocolate </strong>- replace 25 g of flour with 25g of cocoa powder</p>
<p><strong>Coffee </strong>- add 2 tablespoons of instant coffee dissolved in 2 tablespoons of boiling water.</p>
<p><strong>Lemon </strong>- add the grated rind of 1 lemon and a squeeze of lemon juice.</p>
<p><strong>Orange </strong>- add the grated rind of 1 orange and a squeeze of orange juice.</p>
