Sweet Chilli Sauce

Description

This is amazingly simple to make, I use my own home-grown chillis.  The great thing is that you can adjust the heat by choosing the right chillis.

Ingredients
2cups jam sugar (This is basically white sugar with Pectin in it)
2cups water
1cup rice vinegar (white wine vinegar or cider vinegar work too)
5cloves garlic
2 jalapeno chillies (These provide the colour)
2 thai birds eye chillies (These provide the heat)
Instructions

1. Finely chop the garlic and chillis.  I tend to leave the seeds in the Jalapenos but remove them from the birds eye chillis.

2. Add the sugar, water, garlic and chillis into a pan.  Bring to the boil and then place on a rapid simmer for 10 minutes.

3. Whilst this is boiling, put 2 jam jars and their lids into oven at 180C for 10 minutes to sterilise them.

4. Remove from heat and allow to cool for 10 minutes.

5. Blitz in a food processor ... carefully its hot!

6. Pour into jam jars and seal once they have cooled but are still warm
