Little Fluffy Pancakes
Perfect for breakfast, these small light and flufy pancakes are a hit every weekend
Preparation
1. Sift flour into a bowl and add the salt.
2. Make a well in the flour and add the egg yolks.
3. stir with wooden spoon, gradually adding about half the milk and drawing in more flour as you stir.
4. Once the mixture is liquid but still really thick switch to an electric whisk and whisk gentle to remove any lumps.
5. Gradually add the rest of the milk.
6. In a separate bowl whisk the egg whites until they form soft peaks.
7. Fold the whites into the batter and then stir gentle until it is blended in.
Cooking
1. Heat a heavy saucepan on a medium heat, add a small amount of vegetable oil and then use a pan of kitchen roll to spread an even film of oil on the pan base.
2. Using a tablespoon add four spoons of pancake mix around the pan.
3. cook until lightly browned then turn with a fish slice, again cook until lightly browned.
4. remove and then re-oil the pan and cook the next batch
Best served with fresh slices of lemon and caster sugar
