Pickled spring onions

<p>Very simple half dressing half side. Great spread over a salad.</p>

Ingredients
4 spring onion (about 6 oz)
1⁄4cup white wine vinegar
1⁄4cup water
1 1⁄2teaspoons sea salt
1 1⁄2teaspoons sugar
1tablespoon chive (finely sliced)
Instructions
<p>1. Whisk vinegar, water, salt and sugar together in the bottom of a small container with a lid until the salt and sugar dissolve. </p>
<p>2. Slice the bulbs and paler green parts into very thin coins and submerge them in the vinegar mixture. Finely slice the chives and add those too.</p>
<p>3. Cover and put in fridge until you’re ready to use them; if you can put them aside for an hour or even overnight, even better.</p>
