Couscous with citrus and pomegranate dressing

Ingredients
300grams pomegranate seeds
500grams couscous
2 orange
4tablespoons white wine vinegar
4tablespoons olive oil
1bunch coriander
500milliliters water
Instructions
<p>1. Put the couscous in a bowl along with a good pinch of salt and pour over the boiling water. Cover and leave to stand for 5 minutes.</p>
<p>2. Fluff gently with a fork to separate the grains. Then stir through the pomegranate seeds and chopped herbs.</p>
<p>3. To make the dressing, mix the orange juice, vinegar and oil together. Pour over couscous.</p>
<p>4. Check seasoning and serve</p>
