Jamie's White Chocolate and Cranberry Cookies
Very Christmas cookies ... sharp cranberries pop in your mouth

Preheat the oven to 180c/gas mark 4.</p>

1. Beat the butter and icing until pale, then add the vanilla.</p>
<p>
2. Combine the flour, cornflour and oats. Add to the butter</p>
<p>
3. Mix in the chocolate and cranberries then shape into a dough ball.</p>
<p>
4. Once the chocolate and cranberries are well combined, break off small lumps of the mixture (making sure you get some cranberries) so you are dividing the dough into 12 small balls.</p>

5. For each ball gently flatten it (only a bit) onto a greased bakingsheet.</p>

[Jamie's recipe : Shape the dough into a roll about an inch and a half wide. Keep in the fridge for at least one hour. Take the dough out of the fridge and remove the clingfilm. Using a sharp knife, slice the dough into 1cm rounds.]</p>

6. Bake for 12-15 mins. They should be golden brown but soft to touch.</p>
<p>
7. Transfer to a cooling rack and allow to cool and crisp a little before devouring!</p>
<p>
If using dried cranberries, soak them in a little hot water until they are soft.</p>
